Meatloaf "cupcakes" with Mashed Potato "frosting"

Meatloaf Bites
Want a unique twist on a classic dinner? Try these easy meatloaf "cupcakes" with mashed potato "frosting" and bacon bit "sprinkles".

Ingredients:

Meat Mixture
-1 lb ground turkey or beef
-2 eggs
-1 c. breadcrumbs
-1 tsp onion powder
-2 garlic cloves (chopped)
-1 tsp garlic powder
-1 tsp Worcestershire sauce

Potato Topping:
-5 extra large poataoes
-3/4 c. sour cream
-3/4 c. milk
-1/4 c. bacon bits
-Ketchup
To Make:
1) Preheat the oven to 350 degrees.
2)Mix meat, eggs, breadcrumbs, onion powder, garlic cloves, garlic powder, and Worcestershire sauce together in a bowl. 
3) Grease two muffin tins. Spoon meat mixture into tins. Bake for about 35 minutes or until golden brown.
4)While meat "cupcakes" are baking, peel and chop the potatoes. Place them in a pot of water. Bring to a boil and cook until potatoes are tender. Drain out the water and mash the potatoes. Mix with milk and sour cream.
5)Remove meat "cupcakes" from muffin tin. Place on a platter.
6) Spoon mashed potatoes into a frosting gun (or a plastic bag with a corner snipped off.)
7)Squeeze potatoes onto the top of meat as if frosting a cupcake. Top with bacon bits, ketchup, and any other toppings you desire (chives, extra sour cream, etc.)

Cute, easy, and yummy, these meatloaf cupcakes are definitely a crowd pleaser. My family loved them!
